The Hotel

4* Amber Springs is the perfect getaway only an hour from Dublin in the Sunny South East in Gorey North Wexford. A family run hotel and part of the Redmond Hotel Group you will receive the warmest of welcomes and enjoy the most comfortable of stays while you relax, revive and restore. With full use of the leisure facilities, lots of fun in Brooks Bar and great food in Kelby's Bistro, outside you will find a pet farm, go-karting, terrace bar with children's playground and their very own train that will bring you down through the parklands.

The Restaurant

The ambience created in Kelby's is warm & friendly in a relaxed atmosphere. Their culinary philosophy is simple, the marriage of fine food with fine wine. Head Chef believes in creating dishes from the highest quality freshest ingredients, all of which come directly from Redmond Farm or are sourced locally. Kelby's is a unique dining experience, the vast picture windows that run the length of the restaurant create a stunning backdrop.

We wanted to really get a sense of the flavours and experience this farm to fork restaurant, and so took some advice from Antonio. I began with the guinea fowl & venison roulade, two nicely pink pieces of venison rolled with the guinea fowl and served with an apple & date chutney while Fred enjoyed a Redmond Farm vegetable soup served with garlic scented croutons and a selection of homemade breads. To follow I stayed with the game and loved the roast loin of venison, served on braised red cabbage with a celeriac puree & game jus. This time went with their signature dish, their very own dry aged Angus rib eye of beef which came with roast shallot, grilled mushroom & cafe de Paris. This was a great piece of beef, treated well and with a depth of flavour so often absent. Presentation and attention to detail of all dishes were to the very highest standards, a credit to head Chef Conor Spacey and his team in the kitchen

Natasha Lacy has recently joined from Carton House, is a pastry chef of some class, and is no behind all their desserts at both Amber Springs and Ashdown Park, so this was a course I was really looking forward to. Choices on the menu included apple & cherry strudel with vanilla ice cream, baileys bombe or a passion fruit delice with mango & pineapple salsa. The vanilla crème brulee with sable biscuit was delicious, while Fred’s lemon tart with vanilla mascarpone & raspberry coulis, was zingy and creamy in balance.

We liked Amber Springs a lot, and it’s a destination not to be overlooked.
